Sientan las bases de toda la metodolog\u00eda del proyecto, especialmente del Enfoque Integral de la Alimentaci\u00f3n Escolar, y pueden ser una valiosa inspiraci\u00f3n para la comunidad cient\u00edfica y de la alimentaci\u00f3n escolar en general.<\/p>\n\n\n\n<p class=\" eplus-wrapper\"><em>\u00abCreemos que definir un entorno escolar saludable y sostenible es esencial para lograr un lenguaje com\u00fan entre todos los actores implicados en el sistema alimentario, tanto dentro como alrededor de las escuelas\u00bb<\/em>, afirma<strong> Irene Vidal S\u00e1nchez<\/strong>, responsable t\u00e9cnica del proyecto SF4C en la Universidad de Alcal\u00e1 (Espa\u00f1a).<\/p>\n\n\n\n<p class=\" eplus-wrapper\">As\u00ed, ambas definiciones facilitar\u00e1n el debate y la acci\u00f3n para mejorar las comidas escolares y, por tanto, tambi\u00e9n servir\u00e1n para contribuir a los Objetivos de Desarrollo Sostenible.<\/p>\n\n\n\n<h3 class=\"eplus-wrapper wp-block-heading\">ATENCI\u00d3N ESPECIAL EN NI\u00d1OS Y ADOLESCENTES<\/h3>\n\n\n\n<p class=\" eplus-wrapper\">Aunque no existe una definici\u00f3n oficial sobre entornos escolares saludables y sostenibles, muchas organizaciones ya hab\u00edan establecido definiciones de \u00abalimentaci\u00f3n sostenible\u00bb en sus documentos oficiales. Otras iniciativas tambi\u00e9n hab\u00edan incluido el t\u00e9rmino \u00absostenibilidad\u00bb en sus criterios de desarrollo.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">Sin embargo, todas las definiciones anteriores no daban prioridad a los ni\u00f1os y adolescentes como partes interesadas clave. Dada su especial susceptibilidad a las acciones de todo el sistema alimentario que repercuten negativamente en las dietas de los j\u00f3venes, las definiciones se elaboraron centr\u00e1ndose en las escuelas, los ni\u00f1os y los adolescentes.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">Todos los socios del proyecto SF4C identificaron los aspectos y principios clave que hacen que la alimentaci\u00f3n escolar sea saludable y sostenible:<\/p>\n\n\n\n<ul class=\"eplus-wrapper wp-block-list\">\n<li class=\" eplus-wrapper\">Contenido nutricional,\u00a0\u00a0<\/li>\n\n\n\n<li class=\" eplus-wrapper\">Opciones vegetarianas,\u00a0\u00a0<\/li>\n\n\n\n<li class=\" eplus-wrapper\">Alimentos ecol\u00f3gicos,\u00a0\u00a0<\/li>\n\n\n\n<li class=\" eplus-wrapper\">Alergias,\u00a0\u00a0<\/li>\n\n\n\n<li class=\" eplus-wrapper\">Alimentos locales,\u00a0\u00a0<\/li>\n\n\n\n<li class=\" eplus-wrapper\">Eficiencia en los recursos (por ejemplo, alimentos y envases alimentarios, generaci\u00f3n de residuos).\u00a0<\/li>\n<\/ul>\n\n\n\n<p class=\" eplus-wrapper\">Adem\u00e1s, se considera que los alimentos y los men\u00fas escolares tienen que ser suficientes y seguros y proporcionar contenidos nutricionales \u00f3ptimos. Adem\u00e1s, deben ser asequibles para las escuelas, los padres y los municipios y apoyar la resiliencia de los sistemas alimentarios.<\/p>\n\n\n\n<h3 class=\"eplus-wrapper wp-block-heading\">\u00bfCU\u00c1LES SON LAS VENTAJAS DE CONSEGUIR UN SISTEMA ALIMENTARIO ESCOLAR SOSTENIBLE?<\/h3>\n\n\n\n<p class=\" eplus-wrapper\">Los sistemas alimentarios escolares sostenibles (SAES) promueven la regeneraci\u00f3n de los entornos naturales. Minimizan los impactos ecol\u00f3gicos negativos mediante el freno de las emisiones de gases de efecto invernadero y el fomento de acciones por el clima, as\u00ed como la reducci\u00f3n del uso del agua, la tierra y la energ\u00eda. Tambi\u00e9n defienden la regeneraci\u00f3n de estos recursos, as\u00ed como la reducci\u00f3n de pesticidas, fertilizantes y antibi\u00f3ticos qu\u00edmicos de s\u00edntesis. Los sistemas alimentarios escolares sostenibles apoyan la recuperaci\u00f3n de la biodiversidad y los ecosistemas y frenan la p\u00e9rdida de biodiversidad. Evitan la generaci\u00f3n de residuos y promueven una econom\u00eda circular.
